Hi guys! I took a long break... I'm hoping to be back again with more recipes on a consistent basis. Plus I'm going home soon so I will ask my grandma for all her top picks ;)
I hope you are enjoying the summer so far! Here's a fresh, tasty and healthy pasta perfect for those summer days.
Recipe for 4 people:
320 gr penne
500 gr shrimps
200 gr prawns
4 zucchini
1/2 glass white wine
1 clove of garlic
salt and pepper
2 tablespoons chopped Italian parsley
extra virgin olive oil

Start by washing the zucchini and slice them really thin. Clean the shrimps and prawns.
In a non-stick skillet heat up 4 tablespoons of olive oil on medium high heat; add the clove of garlic and cook until it turns golden.

Remove the garlic and add the zucchini, saute for 7-10 minutes. Add shrimps and prawns, cook for 2-3 minutes, then add white wine and cook until seafood is cooked (5-6 minutes).
In the meantime, bring a pot of water to a boil, salt the water and add penne. Cook according to package directions (about 10-11 minutes), drain the pasta and add to the zucchini and seafood skillet. Give it a good mix and cook for a couple more minutes and sprinkle with some pepper and parsley. Your pasta is ready to be served.
Enjoy!
Tips:
You can also add cherry tomatoes (add them when you are cooking the seafood) and/or heavy cream.
You can swap penne for other types of pasta, if you'd like.
