Rose apple tart


Hi guys! Mother's day is fast approaching and I thought of sharing a nice dessert that you could make for your mom! :) I wish I could make this for my mom!

Recipe for 1 tart:


Dough:

1 1/4 cup of flour

1 tablespoon white sugar

8 tablespoons of unsalted butter (room temperature)

1/4 teaspoon salt

3 tablespoon ice cold water

Filling:

4 apples (Fuji or Pink Lady)

1/2 cup of brown sugar (divided in two 1/4 cup + 1/4 cup)

4 tablespoons of butter

3 tablespoons of lemon juice



Start working on the dough with the help of a Kitchen Aid: add flour, sugar, butter and salt work it for 1 minute on low speed. Add three tablespoons of cold water and keep mixing until a crumbly dough is formed.

Transfer the dough on a flat surface and finish working it with your hands until it is compact and uniform. The warmth of your hands will melt the butter and help the dough to come together.

Cover the dough with saran wrap or parchment paper and let it rest in the fridge for 1 hour.

You can use any tart pan size or shape. Remove the dough from the fridge and flatten it out with a rolling pin. You can use the parchment paper to prevent the dough to stick to the rolling pin.

Transfer the pastry dough in the pan, trim the edges. You don't need to butter the pan for this recipe.


For the filling, take a small bowl and mix 1/4 Cup of sugar with 2 Tbsp of melted butter. Spread 1/2 teaspoons of the mix at the bottom of the tarts. The tart base is ready.

Cut your apples so that you have multiple flat sides. You will need to slice the apple in thin slices (a mandoline will work best).

You can preheat your oven now. Set it to 150 C.


Apple rose

Place the apple slices in a bowl. In a small cup mix together the remaining sugar (1/4 Cup), the remaining butter (2 Tbsp melted) and the lemon juice. Pour the mix on the apple slices and mix.

Place the apple slices in the microwave for 1 minute so that they will soften and it will be very easy to create our roses. Let’s start with the first rose. Take one slice of apple and start rolling it with your hands very tight. It will be the core of the rose.

Take another apple slice and roll it around the rose core. Keep adding one slice at the time and you will see that your rose will start having nice petals.

Small tip: to give a more realistic effect, add the next apple slice in a different spot from where you started the previous one: the petals will not overlay.

Keep adding apple slices until you will reach the desired rose size. Gently place the first rose in the center of the tart and gently press it so that it will stay.

Keep adding roses to cover the entire base of the tart.


Bake the tart in the oven at 150 C for 25/30 minutes. Let the tart cool down for 5 minutes.
