Prussiane
Merry Christmas peeps! I hope you are spending a lot of time with family, friends and loved ones!
It's too late to share a Christmas recipe, but I'd like to post this dessert/coffee/tea sweet that is usually eaten around Christmas time in Italy.
Recipe for 20 prussiane:
1 puff pastry roll
5 tablespoons of white sugar
water
Remove frozen puff pastry from freezer and let it defrost as per instructions found on its box.
When the pastry is at room temperature, unroll it and lay it out on its parchment paper. Place a couple of inches of water in a small bowl. Dip a pastry brush in the water and brush the entire surface of the puff pastry. Spread 4 tablespoons of sugar on the pastry (use your hands to spread it all over).

Start rolling the pastry towards the centre (inwards), both ends of the pastry will meet in the middle. Make sure that both rolls are around the same size. Place it in the fridge for 30 minutes. Pre heat the oven to 180 C.
Take the biscuits out of the fridge and cut them in slices about 1/2" thick.

Be very gentle while cutting it as the pastry is very soft and could lose its shape if you handle it too roughly. Now, mix 1 tablespoon of sugar in the leftover water and give it a good stir. Place all the rolled up biscuits flat on the parchment paper; move them to a baking tray. Dip the pastry brush on the sugary water and brush the top of the biscuits. Place the tray in the oven and cook for 10-12 minutes. Remove from the oven at flip the biscuits, so that the bottom part faces up (bottom is golden, top is still pretty clear). Cook another 3-4 minutes until the top becomes golden as well. Remove from oven and enjoy!
Tips:
I enjoy these biscuits with a good cup of tea.
They will last in an airtight container for 2-3 days.
