Cozze alla marinara (Mussels)
Haaaaiii guys! The weather here in Vancouver has been cold and what better way to warm up than cooking up some delicious seafood?! :) This mussel recipe is super easy to make, and I personally love it. It's simple, but packed with flavour.
Recipe for 4 people:
1.5 kg of mussels
2 garlic cloves
50 ml white cooking wine
5 tablespoons of extra virgin olive oil
2 tablespoons of minced Italian parsley
Start by cleaning the mussels very well - brush them and de-beard them. Rinse them under cold water. (If this is the first time making mussels and you are unsure on how to clean them, read the directions here.)
Once your mussels are clean, place them in a bowl. Take a non-stick frying pan and warm up the olive oil on medium heat, when the oil is warm add the garlic. You can mash the garlic or leave the entire clove in one piece. Usually I leave it whole so that I can remove it once I am ready to serve the mussels. Cook for a couple of minutes, then add the mussels. When the mussels start to open up slightly, add the white wine and the minced parsley, increase the heat to medium-high. Place a lid on top of the pan, and let the mussels cook for another 10 minutes. They are cooked when all the mussels open up. Your mussels are now ready to be served. Enjoy!
Tips:
This dish is best eaten right away and I don't recommend storing leftovers.
