Panna cotta

Panna cotta is an easy, tasty dessert.

Recipe for 5 people:

Fill a small bowl with very cold water. Add the gelatin sheets and let them rest in there for 10 minutes. Open up the vanilla stick and get the seeds out (look here how to do it.) Take a small saucepan and add whipping cream, vanilla seeds, vanilla stick and sugar. Heat the ingredients up on medium-high heat, until the whipping cream starts to boil. Turn off and remove from heat. Remove the gelatin sheets from the water and give them a good squeeze to get all excess water out. You can now throw away the vanilla stick (it was used to intensify the flavour) and add the gelatin sheets to the whipping cream stirring for 1 minute. Divide the mixture in 5 ramekins (each ramekin: 100ml or 3 oz) and place in the fridge for 3 hours.

After 3 hours in the fridge, it's ready to be served. Use this trick to remove panna cotta from the ramekin: take a saucepan and add some water. Bring it to a boil, remove the saucepan off the heat. Place one ramekin (or two) at a time making sure that the water level is 1" below the rim of the ramekin. Make sure no water gets into panna cotta. Leave for 10-15 seconds, then place the ramekin on a dish upside down so that the panna cotta slides into the plate. (You can help yourself with a knife by gently going around the rim). Top panna cotta with berries and a couple of mint leaves. Enjoy!

Tips:

If you don't want to use a ramekin (or buy one!) you can use small 100ml (3oz) clear glasses and once removed from the fridge, top panna cotta with berries and mint without removing it from the glass!

You can store panna cotta in the fridge, covered, for up to 3 days.
