Authentic Granita Siciliana
With the warm weather approaching, preparing granita will be a real refreshing treat. Enjoy! :)
Recipe:
500 ml of water ( 2 cups)
500 ml of filtered lemon juice ( 2 cups)
250 gr of sugar ( 1 1/4 cups)
Bring water to a simmer, add sugar. Let it dissolve and disappear in the water. Once that's done, turn off the heat. Cut your lemons in half, squeeze the juice out and filter it with the help of a strainer. You will need to obtain 500 ml of filtered juice. Once you have it, add it to the (now cold) water. Whisk it all together. *
Pour the contents into a plastic or metal bowl, cover it with plastic wrap and place it in the freezer for 30 minutes. Take it out of the freezer, and with the help of a spoon, energetically break the ice crystals. Place it back in the freezer. You will have to do this 3 times. You'll place it in the freezer for 15-30 minutes, take it out and break the ice then put it back in. That is is! You are now ready to enjoy your refreshing granita!!
Tips:
It's important you have the right ratio of water and lemon juice. I would advise to measure in ml instead of cups.
It's best if you use organic lemons, as they are less sour.
*You can spike your granita with vodka or gin. Just add a shot of alcohol when you are mixing water and lemon juice together.
You can store granita in the freezer up to 15 days.
If the granita becomes too hard in the freezer, break it and pulse it in the blender a couple of times!
