Fried sole

This fried sole is my grandma Nives forte. It's super quick and easy to prepare, but it's packed with flavour! I usually pair it with Parmesan zucchini (let me know if you're interested in that recipe!) and I find it delicious.
Recipe for 2 people:
4 sole fillets
a little bit of flour (~1/4 cup)
canola oil (~1/2 cup)
a pinch of salt
Take a non stick frying pan and pour the canola oil in. I usually just pour about 1" thick so that it barely covers the fillet. Heat up on medium high heat. Flour each sole fillet and shake off excess flour.
Cook 2-3 minutes per side, until golden. Be very gentle when flipping sole fillets, they are extremely delicate and they break easily. I recommend using a spatula.
Take the fried soles out of the pan, place them in a plate with a layer of paper towel and gently pat off the excess oil on both sides of the fillet.
Sprinkle a pinch of salt on top of it, and there you have it!

Tips:
This dish is best eaten right away. I don't recommend storing it in the fridge for the following day, as it will be soggy.
